{Pumpkin Pie Place Cards}


Well, hey there! I haven't seen you in forever!

Really, I have no excuse for my lack of posting other than... life. You all know how that is, right? Life just gets in the way sometimes. Life moves FAST, doesn't it? Can you even believe that Thanksgiving in in just over 2 weeks? Crazy.

Today my friend Darla (of Bakingdom) is winging her way off to Spain. Spain?? What?

I'm over here all like, "Hey, I'm going to Target!". It's the glamorous life that I lead, folks. The worst part about it? My friend Lori and I are way excited about going to Target! We don't have one close, so we are road trippin' it (about 45 minutes) for a girls day out. Target and lunch with my awesome bestie friend? It may not be Spain, but it will be a great time.

Also, Darla doesn't have Target over there, so *sticks out tongue*

When she goes to London next month, I may NOT be able to contain my jealousy. It may end our friendship. I'll reconsider this if she buys me awesome presents though, so, Darla. Ball? Your court.

We will be getting some Christmas shopping done hopefully, and yes... Thankgiving foods will be purchased.

As I've mentioned in prior posts, I was a Blog Ambassador for Walkers Shortbread. My time is up with them, but I still choose to post about them because I love their all natural and delicious products. When I got the Shortbread Triangles out of the package, I loved their little pie shape. I decided to use it to it's full advantage and make them look even MORE like pies.

This was quick and easy and will be so festive on my Thanksgiving table.


All you need for these are the Walkers Shortbread Triangles, peanut butter candy melts (by Wilton) & white chocolate (candy melts or almond bark).

Melt some white chocolate (double boiler, microwave, or a chocolate pot like I have), and allow to cool slightly. Snip a tiny bit off the end of a ziploc baggie (heavier freezer bags work better) or a piping bag. Squeeze out in a circular motion working upward to make a little spiral of whipped cream. Allow this to harden.

Melt the peanut butter candy melts and spread on the top of the cookie and part way down the side. I use a baby spoon for a lot of my chocolate work. Work carefully and try not to get any on the 'crust' at the top and leave a bit for a bottom crust. Add one of the hardened "whipped creams" to the top while the peanut butter melts are still wet, then allow the coating to cool completely.

After that, simply make up little tags with everyone's names. Done!



Aren't they sweet?

And guess what?? They taste good too! Bonus!

You can also use Petticoat Tails (below), they don't turn out quite as clean, but they are still adorable!



I was cruising Pinterest this morning and stumbled across these cookies by Sweet Sugar Belle. I had actually not seen these before making my own (believe me, I thought I was SUPER clever coming up with the idea). I wanted to give a link though because I think Callye is amazing and because these are a great alternative to my placecards if you cannot find the Walkers products in your store or don't want to order online. Also, the fact that I had an idea similar to Callye is making me feel super clever anyway!

I've got some other recipes in the works, so hopefully I won't go as long without a post again. Plus, I might just find something exciting on my trip to Spain. What? Oh, yeah. I mean on my trip to Target. Riiiiiiiiiight.

{Back To School Trail Mix}


I just said a dirty word up there. It starts with 'S' and ends in 'chool'.

The Bean is NOT excited that it is starting soon. Soon, as in next week. Next week my baby will begin his Junior year.

That's dumb.

Time is dumb. Mean. Mean time, mean.

When school starts I am always in need of quick lunch and after school snacks. Yes, he's a junior and he still packs his lunch. Our cafeteria? Not great.

Or good.

I recently got my latest shipment of Walkers Shortbread.

In it were packages of mini cookies! I love all things mini. I don't know why, but they just taste better when they are widdo and tiny.

The first thing I thought of, seeing their size, was trail mix. While the cookies are delicious straight out of the bag, this is just something a little different.

You can make this in any size you like, but I made a small batch.

Like any other trail mix, of course, you can add in whatever you like! This is just a good place to start.


In my Walkers shipment, they sent one of their newest products, Mini Crunchy Oatmeal Cookies. Let me just tell you, these are SO delicious. My new favorite Walkers product. Bean loved them too. They were most excellent dipped in tea, or coffee, or alone... YUM.

{Raspberry Shortbread Crusted Brownies}


Ok, confession time.

My favorite cookies? Plain jane.

Sugar. Butter. Shortbread.

I don't need that extra stuff. Delicious, pure flavors. That's what I like.

Shortbread cookies are probably my favorite. I love the rich, butteriness of them.

I was recently invited to join the Ambassador Program for Walkers Shortbread. The awesome news here is that Walker's was the brand I already buy!

Here's a little info about Walkers:

The brand is imported directly from Scotland. The company was started in 1898 by Joseph Walker. It is still family- owned & ran today. They bake their shortbreads, cakes, traditional cookies, oatcakes, and puddings in the village of Aberlour in the Highlands of Scotland.

 My first shipment from Walkers contained Raspberry Thins. I knew right away what I wanted to make.


The raspberry in these cookies (biscuits? I want to feel Scottish, so, I'm going with biscuits!) is intensely real tasting. No 'fake' raspberry taste. They smell amazing.

What pairs perfectly with raspberries? Why, chocolate of course!

I decided to make a Raspberry Crusted Shortbread Brownie.

Super easy to do. Just pulverize your biscuits, add a bit of sugar, flour, and butter to make a crust. Press into an 8x8 pan. Then, whip up this 1 pan brownie from my friend Darla, at Bakingdom. I love her recipe because it has the slightly crisp crust and the deep, fudgey middle. Yum.

After cool, dust with a little powdered sugar & top with fresh whipped cream if you wish! You could also top with fresh raspberries.

Honestly, I intended to put a chocolate glaze on these, it it was NOT needed. They are so good as is!


The biscuit I topped the brownie with is the Vanilla Shortbread, which is not only delicious, but a really lovely looking cookie.

You know what makes shortbread crusted brownies even better better?

Raspberry Shortbread Crusted Brownies

Preheat oven to 350 F

For the crust:

1 package (4.2 oz) Walkers Raspberry Shortbread Thins
1/4 cup all-purpose flour
2 Tablespoons sugar
1/4 cup butter, melted

Pulverize the cookies in a food processor. Stir in the melted butter, flour, and sugar until well mixed. This should be a 'wet sand' texture.

Press into a greased 8x8 glass dish. Set aside.

For the Brownies:
(recipe by Darla of Bakingdom)

1/2 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup  unsalted butter
1 cup sugar
2 eggs
1/2 teaspoon vanilla extract

Mix together the cocoa, flour, baking powder, and salt in a bowl. Set aside.

In a medium saucepan, melt butter. When butter is melted, remove from heat and mix in sugar. Add the eggs, one at a time. Stir in the vanilla. Slowly, whisk the dry ingredients into the sugar mixture.

When well combined, pour batter on top of the shortbread crust.

Bake for 30-40 minutes or until a toothpick comes out clean with only a few crumbs clinging to it. Allow to cool totally before cutting and serving.
