{Very Berry Milkshake Cookies}


There was a spider in my shower.

A big one. Just sitting there. Looking at me.

Seriously dude? That is NOT cool. You don't see me coming into your little spider bathroom, do ya?

DO YA?

No.

I hate spiders. Like, scream like a little girl hate. I've been known to cry. I realize that I am like a zillion times bigger than them, but NO.

I'm a farm girl. Bugs do not bother me. Bees? Wasps? I don't freak out and run away. When I was a kid my brother and I used to catch garter snakes. I dug worms with him to go fishing. I had a pet bullfrog. And mice, hamsters, and gerbils.

I'm pretty friendly when it comes to other creatures.

Just not spiders. With their creepy 8 legs and creepy 8 eyeballs.

I blame my second grade teacher. In her science class I learned of the extra eyeballs. Folks, it freaked me out. I've never been the same since. This is on your head, Mrs. Yochum!

Anyway, back to my shower. He was just sitting there and I wasn't having in. No one to cry to, I was home alone. I didn't dare leave the room for fear he'd take off and then he could be ANYWHERE. There was nothing to smush him with other than toilet paper and my bare hands. NO.

I squirted him with toilet bowl cleaner. I love you Tidy Bowl!

I'd apologize to the spider for his untimely demise, but NO.

Afterwards, I was emotionally wrought. I needed a cookie.

Luckily, I had these.




I had every intention of calling these 'Lightly Lemon Cookies with Berry Butterceam", then the Bean ate one. He declared they tasted JUST like a milkshake. Later, the husband ate one. He said something like "OMG, he is right. MILKSHAKE COOKIES". My hubs is the normal, "Yeah, that's good", "those are OK", "I like them", or my personal favorite "they aren't bad". Well, YAY, I'm so glad to know they 'aren't bad'. Le sigh. However, he used the word "astonishing" with these cookies. I'm prrrrrrrrretty sure they are going in the Favorites File.

I started off with a recipe for New York Black and White cookies and adapted to what I wanted.

If you've never had a Black and White (and I haven't), they are an amazing texture. Somewhere between a Whoopie Pie & a Sugar Cookie. In other words, perfect. Whoopie Cookie!



One finished, I topped with a Mixed Berry Buttercream, or as it is now known in my house, Milkshake Buttercream.

These cookies are fat, fluffy, tender, and delicious. I hope you all love them as much as my family.

These are a great cookie for summer.

He only used a fork because I MADE him. Can you imagine THAT mess? Ahh... teenagers.

Very Berry Milkshake Cookies
Recipe adapted from Black & White Cookies by Bakingdom
Yield: approx 18 cookies

 For the Cookies:
1 cup cake flour
1 cup all purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter, at room temperature
1 cup sugar
1 egg
1 egg yolk
1 teaspoon vanilla extract
1 teaspoon finely grated lemon zest*
1 Tablespoon fresh lemon juice*
1/2 cup milk 

*This is a very light lemon flavor, but if you are not a fan you can skip the lemon.

Preheat to 375 degrees F

In a large bowl, mix together your flours, baking powder, and salt.

In another large mixing bowl, beat the butter until creamy. Add the sugar in a little at a time, and mix again until light and fluffy. Add the egg & egg yolk. Beat again until fluffy. Scrap the sides if needed. Add 1/3 of the flour mixture and mix until just combined. Follow with half the milk, again mixing until just combined. Repeat process 1/3 of the flour, then the other 1/2 of the milk, ending with the last 1/3 of flour. Add the lemon zest, lemon juice, and vanilla. Mix in quickly and lightly. Be careful not to overmix.

Drop the batter onto parchment lined cookie sheets. These are large cookies, I just a 2 Tablespoon scoop. Leave 2" between cookies. Bake until firm and the edges brown. About 15 (to 18) minutes. Cool on cookie sheet for a few minutes before moving to cooling racks. Cool completely before icing.



Milkshake Buttercream
(Mixed Berry Buttercream)
Recipe by Tina @ Sugar Bean Bakers

1/2 cup butter, at room temperature
2 cups powdered sugar
1/4 cup solid shortening (crisco, etc)
1/4 cup finely crushed berries**
1 Tablespoon heavy cream Or 1 Tablespoon melted and lightly cooled white chocolate

**I used a mix of strawberries, blueberries, red raspberries, and blackberries

Beat butter and shortening until fluffy. Add powered sugar and beat. Beat in the heavy cream, or melted chocolate***. If using chocolate, be sure to add it WHILE the mixer is going.  Add in the berries. Mix until combined.

***the wateriness of the berries tends to 'break' the buttercream. The heavy cream or melted chocolate will bind it back together.

Spread on top of cookies.

{Candy Man Cookies}



Tomorrow is the premiere of my favorite TV show.

Note, I said MY favorite TV show. This time last year, when I made these Pineapple Upside Down Cupcakes,  you'll note I said OUR favorite show.

The other day, I said to the Bean, "omigosh, our favorite show is coming on in a few days!!!".
To which he relied, "You mean YOUR favorite show".

A little piece of me wilted right then. A little piece of me that will never been green and happy again.

Kids are mean.

Now, granted, his favorite show is pretty dang cool. I mean, it's Doctor Who. However, he went on to tell me that Sherlock was number 2. Ok, gosh dern it, I LOVE Sherlock too, but when did this happen? When did we grow soooo far apart? I mean, my favorite show is now his third favorite? People, are you picking up what I'm putting down?

Or, it's possible I'm being overly dramatic. 

Scratch that. That cannot be true. 

Anyway, MY favorite show comes back on tomorrow. The problem with watching these cable shows is the fact that they are a literal YEAR from one season to the next. Network shows have a 3-4 month hiatus in the summer, but cable? A full year. That's just meanness.

However, in a little over 24 hours, I will be sitting down to watch the adventures of Shawn, Gus, and the Blueberry.

Psych is coming back!

Now, if you don't know what Psych is, refer to my above link about the cupcakes. I tell a little about it there. It's a witty show, full of mystery, a fake psychic, real crimes, and oodles of 80s references.

What's not to love.

In the Season finale (in APRIL OF LAST YEAR, FOLKS), Gus had gone candy crazy. He was shoving it in every chance he got. So much so that this exchange took place:

Shawn: "You have a problem, Candy Man."

Gus: "I make the world taste good."

which is funny, cause of this song.

Get it. hahahahaaha.

 
So, I made some cookies for Gus.

I think he will appreciate them, they are chock FULL of candy.

I started with a basic, buttery cookie, to which I added over 2 cups of candy.

Cause. Candy.

I love this recipe. I have used it for years. I use to to make chocolate chip cookies, of course. I sub in some oatmeal to make an oatmeal chocolate chip, I use it to make M&M cookies, Butterscotch cookies, some cocoa powder to make double chocolate chip cookies, it's a great blank slate of a chewy, buttery cookie.


For these cookies, I added a ton of candies. As I mentioned, over 2 cups.

I used M&Ms, Reese's Pieces, Nestle Crunch, Butterfinger, Heath Bar, and a Hershey Bar.

I also used Milk Duds, but there is a trick to them. Cut them in 1/2 and place them in the center of your ball of dough. If they get to close to the edge of the cookie, they will goo out and make a bit of a mess.


Any Psych fans out there?

Do you think Gus would approve?


Cause my guys sure did.


I had to eat one (or 11) to deal with the emotional trauma inflicted on me by the Bean's declaration that we no longer share the same favorite show.

Growing up is hard.

I hear it is for the teenagers too.

Candy Man Cookies
Adapted from this recipe at AllRecipes

1 cup packed brown sugar
1/2 cup white sugar
 2 cups all-purpose flour
 1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
 1 egg
 1 egg yolk
1 tablespoon vanilla extract
 2 cups candy of your choice, chopped, if bars

Preheat oven to 325. 

Line sheet with parchment or a silpat mat or grease the sheet.

Add your melted butter in a mixing bowl along with the sugars, until well combined. Beat in the egg and egg yolk. Add the vanilla. Mix in the soda and salt. Add the flour about a 1/2 cup at a time.
Mix in the candies.

Bake for 13-16 minutes

Allow to sit on sheet for a few minutes before moving to cooling racks.

{ Banana Streusel Muffins }


Confession: I'm a Crazy Cat Lady.

Well, I mean, can you be a Crazy Cat Lady with one cat? I think you can. Therefore, I'm pretty sure I meet the criteria.

Our cat is nearly 12 years old. We got him when the Bean was four. The Bean had, at the time, a little black cat that lived outside. His name was Sam. Sam had a best friend. He was a bunny named George. I know that sounds unlikely and weird, but it's a true story.

We would let George Bunny out of his cage and he and Sammy would play. They were just the funniest lil things.

Well, Sammy was young, George Bunny was old. George passed away. The hubs and the little Bean put George in shoebox and buried him in the backyard. Sammy followed them and meowed the whole time. Then, when they were finished Sam laid on George's grave. It was so sad. That evening, Sam went across the road, which he had never done ever, and got ran over. I'm convinced the cat committed suicide. It was the most bizarre thing. Extremely tragic for our 4 year old as well.

A couple months later, we found a lady giving away kittens at the county fair. The Bean picked out a kitty and his heart was just set on him. Only him. I just had to let him have him. That is where our kitty, Fairley (middle name Bueller, haha) came from. The Fair. Fairley. The Fair cat. We love him.

He is the sweetest cat on the planet. I might be biased, nah, that's crazy talk, he really is the sweetest cat on the planet. I love him. I love love love love love him.

I'm on instagram. I post photos of my cat. Too. Much. TOOOO MUCH.

I AM a crazy cat lady.

We should really talk about something else. ANYTHING else.

How about Banana Muffins? Or better yet, Banana Streusel Muffins.


The original recipe for the muffins (without streusel), I THINK is from the old Betty Crocker cookbook. I've used it so long though, I am not positive.

We love banana muffins around here, but you know what makes em better?

Streusel.

So, Banana Streusel Muffins is it.

Just mix up the ingredients for the muffins, put in muffin tins, sprinkle the stresuel on top, and bake.

I think precious few things make your house smell better than banana bread.

Banana Streusel Muffins
adapted by Tina @ Sugar Bean Bakers


Muffins
1 Cup Sugar
2 Eggs
1/3 Cup Butter, Softened
1/3 Cup Water
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
3-4 mashed RIPE bananas*
1 2/3 Cup Flour
1/2 Cup chopped Walnuts or Pecans (optional)

Streusel
1/2 Stick Butter, cold
1/3 Cup packed Brown Sugar
1/4 Cup Quick Oats
1/2 Cup Flour

*the riper the banana the better the bread. The ones in the photos above are not nearly ripe enough for me. Brown to black bananas make the best bread.

For the muffins:

Cream the butter and sugar together in a mixing bowl until fluffy. Add in the water, eggs, and mashed banana. Mix well. Add in dry ingredients and mix slowly until well combined.

Grease a muffin pan, or use paper liners, and fill cups 2/3 full.

For the streusel:

Cut the dry ingredients into the butter using a pastry cutter or a fork (or a food processor) until the mixture looks like peas.

Sprinkle over muffins (you may have slightly more than you need for this recipe).

Bake at 350 for 20-25 minutes (check at 20). A toothpick will come out clean from the muffin, but a bit of streusel may still cling to it. Makes approx. 16 muffins.

{ Gooey Cheesecake Squares }




Ever have one of those trippy moments as an adult where you are just like, "Wait... whattttttt?". You know, the ones that leave you feeling as confused as Bill and Ted on their Excellent Adventure?

"Whoa... duuuuuuude."

I had one of those a few weeks ago.

I was out to lunch with my friend Jackie. She was one of my best friends at church growing up. She recently moved back home and we try to get together about once a month for lunch. 20 years had passed since Jacks moved away & we lost contact, but when she moved back, it felt like yesterday.
We always have way too much fun together.

Jacks and I were sitting there talking about the good ole days of Sunday School. We LOVED our teacher. Kids could not wait to hit Jr. High so they could be in Joyce's class. Joyce was legendary. She was just generally great. We loved her parties and other all her other fun activities. Her Sunday School lessons were never boring. She made coming to church fun at an age when it, let's be honest here, often isn't. Grades 7-12 were the primo time to be a kid in Sunday School at our church, thanks to her.

I am now the Jr High/High School Youth Leader/Sunday School teacher (along with our Associate Minister, Robby). Now, I don't wanna sound big headed or anything, but the kids love me. The main difference, however, is my maturity level. Joyce was very mature. I'm a 3 year old. Ok, fine, I'm a 13 year old. I geek out over the same things the kids do. I listen to the same music. I watch the same shows. I read the same books.

And apparently... they like that.

Except Bieber. I'm sorry. That's where we part ways.

I'm still the adult, but I'm just cool like that. ;)

Plus, I bring them baked goods.

Surely, that's not why they love me though. 

Right? 

RIGHT??

Anyway, as we were sitting there talking, it all hit me.

"Jacks! I'm JOYCE!"

Jacks: "Yes, you are."

When did this happen? When did I become a grown up? Who let me be in charge of other humans? WHY did they let me be in charge of other humans?? Are they SURE they want me to be in charge of other humans???

It's all so... well... trippy.

What you need to know upfront here though, is that our youth grouppers are amazing. I'm not sure how we got lucky enough to get the group of kids we got, but we did. They are smart, witty, well behaved, and just generally phenomenal kids.

And since I promised them mention:

Eric, Gabby, Caitie, Jarrett, Emily, Danny, Seth, Alyssa, Lauren, Dare, Alex, Tate, PJ, and Katrina... and also to our newbies:

Robby and I love you guys. Thanks for being awesome.

Ugh. Mushy stuff. Grody.

What does that all have to do with this recipe?

Very little.

Except that I got this recipe from one of the Bean's old Sunday School Teachers.




This is a very rich and tasty little treat. It goes FAST whenever I make it. Even people who don't like cream cheese love this puppy.

It's fast. It's easy. You'll wanna make it.

Gooey Cheesecake Squares

Base:
1 box Yellow Cake Mix
1 stick butter
1 egg

Topping:
1 package cream cheese, softened
2 eggs
2 1/2 cups powdered sugar


Preheat oven to 350.

In a mixing bowl, add the cake mix, melted butter, and 1 egg.  Beat until it forms a dough.
Press this into a lightly greased 9x13 pan or dish. This will be a play-doh consistency.

In mixing bowl again, add the cream cheese and eggs. Mix until well combined. Add the powered sugar, mix on low until incorporated.

Pour over the dough layer.

Bake at 350 for about 30 minutes, until the edges are brown.

Dust with powdered sugar.

Allow to cool & then cut into squares.

{ Peanut Butter Cheerio Treats }




Now, we all know about Rice Krispie Treats. I mean, really. Those are about as lunchbox standard as PB&J Sandwiches.

But Cheerio Treats are probably not quite as common.

You know how much of a joke school lunches are, right? It's been told and retold in TV, books, and movies. Sadly, a lot of the time it's true. School lunches are BAD. That can be said of the Bean's High School Cafeteria. He packs. EVERY.DAY.

However, when I was in elementary school, our lunches were DEEELISH. So much was made from scratch then, not over processed, frozen foodsicles.

One of our (and by our, I mean EVERYONE'S) favorite things were Cheerio Treats. It was just so exciting to see that on the lunch menu! My mom, who was the President of the PTO for 910 years, asked Alberta, our head cook for the recipe.

I adapted it just a smidge, by adding vanilla, and a little more peanut butter & butter.

Now, I shall share it with you.

It's pretty much just as easy as making Krispie treats. 

What you'll need:


Peanut Butter Cheerio Treats

1 Bag Mini Marshmallows
1/4 Cup Butter
3/4 Cup Peanut Butter
1 Teaspoon Vanilla
5 Cups Cheerios (or other sweetened oat cereal)

Melt butter in large pan on stovetop.



Add in mini marshmallows. Stir constantly until melted. 


 Remove from heat & add vanilla


 and peanut butter


Stir until glossy.

Pour in your Cheerios. 


I actually used these, by Quaker, because they are tooooooooooo adorable.


Press into a greased 13x9 inch pan & allow to cool.

Cut & Serve.


Or..... melt up a little chocolate and drizzle over.

You know you want to.




A couple weeks ago, I showed the cute little heart shaped cereal on my Facebook page. One of my school friends said I should make these.

{ Cookie Dough Sandwich Cookies }






Now the real name for these should be:

Chocolate Chip Cookie Dough Chocolate Chip Cookie Sandwiches.

But I thought better of it.

Last Saturday, after returning from the Bean's auditions for the local summer children's theater, I was sitting here, twiddling my thumbs (or something like that), when this evil idea just fell upon me.

I realize now at this point, that me inventing something new is out of the question. The Googlesphere is too, too full of clever, crafty people. What I'm trying to say, is that someone has probably already came up with this.

Whatevs.

This is what *I* did.

I took our favorite Chocolate Chip Cookie, seen here and filled it with Cookie Dough Buttercream, seen here (*note, be sure to use the Cookie Dough Buttercream recipe, there is also a Cookie Dough Filling in the same post. Don't use that.. that.. wouldn't... work.).

I did add chocolate chips to the Buttercream, which is something I do not do when making the icing for cupcakes.

Just use mini chocolate chips for this. The regular sized ones are too large. I was out of minis and I tried to chop some up, which worked OK. However, the minis would work better.

So, bake up some cookies, whip up some Cookie Dough Buttercream, toss about 1/2 cup of chocolate chips in, mix a little more, then, when the cookies are completely cooled, (with a LARGE open tip) pipe the icing on one cookie (or spread with a knife), and top with another.

These were EXTREMELY popular when I took them to Sunday School.

Extremely?

{ Cookie Dough Bites }




Cookie Dough Bites? I'm not even joking right now!!

The Bean is a cookie dough freak. Freak, I'm tellin ya.

As I alluded to in this post, there would be more cookie dough goings on on this blog.

So, here it is.

The Cookie Dough Cupcakes are Bean's favorite favorite apparently.  

He begs lil a wee pup when I'm making cookies for a bite of dough. Or steals it when I'm not looking, the dirty rotten scoundrel!

So, when I found the cookie dough recipe for the cupcakes, and realized it was eggless, it seemed like the perfect fix for his obsession.

What you do, is make the exact recipe as in the cupcakes. 


Egg-less Cookie Dough

1 1/2 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 stick butter, melted
1/2 cup packed brown sugar
4 Tablespoons granulated white sugar
4 Tablespoons milk
2 teaspoons vanilla extract
1 cup miniature chocolate chips


(original recipe by Recipe Girl


Beat the butter and the sugars together, add the salt, soda, and vanilla. Then add the flour. Add the milk and beat until well mixed. Stir in the chocolate chips with a spatula.

Roll into balls. Should make about 24.

I used the Pampered Chef small scoop. 

Place on a parchment paper lined baking sheet and freeze for 30 minutes.

(I didn't use parchment here, and you don't HAVE to, but you'll have to pry the lil suckers off)


 After freezing, melt up some chocolate. A few at a time (placing the rest back in the fridge or freezer), dip in the chocolate. Fully coat. Using a fork, remove from chocolate and tap off excess. Place on foil/parchment to dry. 



If you wish, throw on a few sprinkles, or swirl on some white chocolate.


AS SOON AS THEY ARE DRIED, EAT THEM.

Go on, you know you want to! 

Kidding (sort of).

 Store in an air tight container in the fridge. Should stay fresh for about 3 days.




So, once again, I thought I invented something, and once again, I was SO wrong. 
After a little Google consultation, I came to find that many people have made these long before me.

One day I WILL invent something. Darn Googledwellers beating me to everything!

{Chocolate Chip Cookie Dough Cupcakes}





The Bean loves cookie dough. Like, crazy loves. The fact that it has raw eggs in it does nothing to stop him begging like a stray dog.

I first made these a couple years ago, and they were met with lukewarm reception, so I'd never made them again.

My BPIC (Baking Partner in Crime, Lori) and I were doing a bake sale at our kid's high school to raise money for a new, and sorely needed, mascot costume, I thought I'd try them again.

Kids, they like cookie dough.

Lori made her Oreo Cupcakes, which are quite like these, but she uses more cookies in the batter, and then, after they are cooled, fills them with a plain buttercream, then tops with an Oreo buttercream (lots of finely crushed cookies in buttercream). They sold like holy friggin hotcakes! I did my Cream Filled Cuppies along with a few downsized Double Trouble Cookies (because the ones in the recipe are HUGE). We nearly sold out and made a nice little bit for our mascot fund.

Lemme tell you about the mascot.

You know how they make fun of mascot costumes on TV/Movies, because they smell bad and no one wants to wear them? That.Is.Ours. It's super gross. Like SUPER GROSS. ALL CAPS. It's the same one that was at the school 20, ahem, a FEW years ago when I was in high school (that sounded convincing, right? RIGHT???!). So, it stays in the closet. No one wears it. We are mascotless. It's sad. Mascot costumes are SPENDY. Like, WOW, spendy. We are working on it though. We'll have a non vomit smell radiating suit before you know it. We're determined.

Maybe I shouldn't have said vomit in a food post.

Hmm...

Oh, well.

Now, cookie dough.

So, here's the dealio. I followed, for the most part, this recipe by Recipe Girl.

You'll need to make a cookie dough batter, I love hers, it's egg-less. The Bean was quite certain I should just sell balls of cookie dough at the Bake Sale. 

Uh, that didn't happen, but it DID, however, give me a devious plan for later on this blog. 

Shyeah, it did!

So, here's her batter, except I doubled it for 24 cupcakes.

Cookie Dough Filling
1 1/2 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 stick butter, melted
1/2 cup packed brown sugar
4 Tablespoons granulated white sugar
4 Tablespoons milk
2 teaspoons vanilla extract
1 cup miniature chocolate chips

Beat the butter and the sugars together, add the salt, soda, and vanilla. Then add the flour. Add the milk and beat until well mixed. Stir in the chocolate chips with a spatula.

Roll into balls.

I used the Pampered Chef small scoop. 


 Place them on a baking sheet and freeze for an hour. I froze mine in the deep freezer rather than the refrigerator freezer. I knew they were good and solidly frozen.

Don't skip this step! If you don't freeze them, the cookie dough will bake  & you'll just have a cookie in your cupcake.

Not that a cookie in your cupcake is a BAD thing, just that it kinda make it a chocolate chip cookie cupcake and not a chocolate chip cookie dough cupcake.

I think.

I'm officially confusing myself and that is never good.

Now, I took a shortcut. I used a box cake mix.

Shhhhhhhhhhhhhh...................don't tell.

Actually, as you'll see, I did this using both a yellow cake and a chocolate cake.

The chocolate were the more popular, FYI.

After prepping your mix, according to the box, and filling your cupcake papers, add 1 ball of cookie dough to each cupcake. Press it down to touch the bottom.


Bake according to box. I, personally, baked mine for 19 minutes.

While cooling, make your Cookie Dough Buttercream. 

This recipe is one I tweaked. The original is from Tidy Mom.


Cookie Dough Buttercream
3 sticks butter, at room temperature
2/3 cup packed brown sugar
3 1/2 cups powdered sugar
3/4 cup flour
3 tbsp. milk
3 teaspoons vanilla extract

Yeah, I said flour. Totally sounds weird, but it gives it that cookie dough taste.

Beat together the butter & brown sugar. Add the vanilla. Mix in the flour. Then slowly add the powdered sugar. Beat in the milk. Mix until amazing.

Top your cooled cuppys with this & a sprinkle of mini chocolate chips!
