{ Easy Cheese Balls & Dips }

I'm digging back in my archives for this post. WAY back for some of them. You'll notice the difference in photography alone.

Who cares what the pics look like though, because the recipes are still YUM.

I've rounded up some quick, easy, and tasty dips and cheese balls for your party tonight.

I've yet to decide which we will have tonight. I should probably figure that out soon.

1.2.3. Cheese Ball

(recipe)

This is my mother-in-law's recipe and it is a HUGE favorite around here. So, so easy.

Chocolate Chip Cheese Ball

(recipe)

This recipe is from my mom and is equally loved.

Buckeye Cheese Ball

(recipe)

The idea for this recipe started with the above Chocolate Chip Cheese Ball and ended up here, in Deliciousland.

Ranch Cheese Ball

(recipe)

This recipe came from a reader named Donna.

Now on to the dips!

Holy Moses Dip

(recipe)

This recipe came from my friend Lori, but the name is all me ;)

Reuben Dip

{Spilled Confetti Cake}

Ever noticed how sprinkles look like confetti?

No? Well, they totally do.

When trying to come up with an idea for a quick and simple New Year's Eve cake, I thought of this little fact. At first I was going to just add the 'confetti' to the top of the cake, to which I was adding a New Year's Eve Ball. In fact, I even made said ball. However, when looking through my cabinets for the perfect sprinkles, I found little champagne glasses that I'd used for another party. I had a different idea in mind with that at first too. I was just sprinkling the cake with confetti and adding more to the glass. Then I thought of what my floor looks like at 12:01 New Year's Day. Confetti EVERYWHERE. Spilled, flung, popped... So, I decided to tip the glass and let the confetti pour out. And that, my friends, is where we are.

This cake is super simple. Just bake up whatever you like, slather in buttercream, and add your confetti. I added mine to the glass, then slowly tipped as I put in on the cake. This resulted in a lot of confetti at the top and at the base of the cake. For the side, I pretty much just took handfuls and threw. It was fun ;)

I also added a bit of confetti between the layers, because fun.

For scale reference, my cake is 3- 6 inch layers. Your glass would fit with room to spare on an 8 or 9 inch cake. You could totally do this on a sheet cake too, and allow the confetti to sprinkle across the top. It's all fun!

Wishing you all a safe and happy New Year's Eve and a beautiful, memorable, fantastic 2014.

Let's do this thing!

{Easy New Year's Eve Party}

As I mentioned Christmas was hard for me. I had SO much to do and so little time to do it in. I'm sorry to have left you all without any new recipes, but the fact that I made it through this season without a felony record is, in itself, a miracle.

However, I MADE it. And it was good! Christmas went off without a hitch (well, almost, dang USPS delivered one present a day late and I'm still waiting on the other). Christmas Eve was quiet and lovely. I saw an idea somewhere last year to do Christmas Eve in a box, so for the last two year's I've done that. Bean got the traditional new jammies, plus a Christmas movie, and movie snacks. After Christmas Eve service, we change into our jammies and watch the movie. This year's movie was Fred Claus. We've got a lot of Christmas movies already, so finding a new one does prove challenging. Christmas morning we awoke early and celebrated just the three of us. Then the grandparents came over for breakfast. We had sausage gravy and biscuits, breakfast fajitas (recipe soon), and liege waffles. Hours and hours of downtime followed which I LOVED. Again, just the three of us. We watched TV, and I prepped for our big Christmas dinner, which really didn't take long at all. The ham cooked while we hung out. I had made dessert the night before, so one less thing. The Bean insists on Texas Sheet Cake every Christmas. It's quick and easy enough for me. My family arrived and we all celebrated together after our meal. Lots of fun moments happened throughout the day. Then, after everyone was gone, Bean and I sat down to watch the Doctor Who Christmas Special and bid Matt Smith, our beloved Eleven, goodbye.

It was a good day. I was finally relaxed and happy.

Now, New Year's Eve upon us and that will be an easy affair. I'm not going complicated this year for sure! Games, food, fun. The end.

Easy New Year's Eve Party

It all starts with our Christmas Tree. For a few years now, I've been doing a New Year's Tree.

It's fun and useful!

New Year's Eve Tree

Then some easy snackies:

Delicious Ham Sams. These are easily made ahead and wrapped in foil. Then just pop in the oven for a bit and you are good to go.

Ham Sams

Now for a little dip, this is the Bean's favorite:

The Big Cheesy

Some sweeties?

My niece requested this.

Chocolate Chip Cheeseball

And finally,

Mock Champagne

This was a huge hit at last year's party and so, so, so easy!

As for games, we will be doing board games, and, of course, our favorite Visual Telephone which I explained in this post.

One more thing to add a little fun, how about some Photo Booth Props? They are easy to make!

Guaranteed fun!

{ The Big Cheesy Dip }

 The Bean has the Flu.

No, he didn't get the shot. No, I don't want to discuss that. ;)

For the last 4 days, he's been planted on the couch. Whenever he is sick, he pulls the coffee table up next to the couch, adds a few (or 12) pillows, a couple blankets and declares "A nest has been established". Then he barely moves.

The cat must sit with him when he's sick. All. The. Time.

In those last 4 days, I will tell you that we have definitely gotten our money's worth of Netflix Streaming. We've watched The King's Speech, Good Will Hunting, The Adventures of Tin Tin, Sahara, The Decoy Bride, and several episodes each of Mr. Bean, Firefly, Doctor Who, The Vicar of Dibley, and The West Wing. Not to mention all of the DVRed shows we've watched.

And yes, we do have a penchant for watching British shows. Is it any wonder over 1/2 of the suggestions Netflix makes for me are British?

The Bean is doing better. Still achy, dizzy, with a sore throat, and very tired, but no more fever or chills! Yay!

He's improving. Except when I tell him to do his make-up work for school. Then suddenly he is SO sick. Tragic.

We are not football people at all. In fact, I have no idea who is playing on Sunday. All I do know is that the coaches are brothers. I saw that on the news today at noon. Didn't catch the team names though. Oops.

However, we were going to go to a Super Bowl Party with our Youth Group on Sunday.

We are staying home instead. Keep the flu germs all here in the house.

You know, so I can get it next week.

I was going to take this to the party, but... no.

I made this dip on New Year's Eve.

We very often have a party food, that my mom makes called Hanky Panky (unfortunate name, I know). I asked her to make them for NYE, but she didn't  have any of the cocktail bread required.

So, I made it into a dip. The Bean L-O-V-E-D it.

Look, I know there are lots of Cheeseburger Dips out there. Many involving ketchup in the dip.

This is not one of those. This is, however, a very unhealthy dip, ie, it's really yummy.

Let me just tell you, there are some things in life that can't be made without the creamy, orange loaf.

This is one.

If you are opposed to a little Velveeta, this recipe is NOT for you.

Scroll down. Banana Muffins. Goooooooooood. (No Velveeta involved).

This is a super simple recipe.

Just brown up hamburger & sausage with onion, dice up some Velveeta, plunk in a crock pot, add a lil milk. Done.

Serve with Tortilla Chips or Fritos (Scoops are best).

I severed this with a round loaf of Rye Bread, but it's much better with chips. Of course.

This is a hearty dip, great for Super Bowl (and lots of other) parties!

Get your game on. Go, fight, win.... um, one of those brothers. I feel like awkward holidays await them, as the one flashes his Super Bowl ring and the other seethes in the corner.

Maybe not, maybe they are fabulously well adjusted and will hold no grudges.

Whatever.

Happy Snacking!

The Hopefully Flu Free Tina

The Big Cheesy Dip

1/2 pound ground beef
1/4 to 1/2 pound ground Italian Sausage *
1/4 cup finely chopped onion (optional)
1 pound Velveeta, diced
1/4 to 1/2 cup milk **

Fry the burger, sausage, and onion in a skillet. Do not salt (the cheese and chips will add plenty of salt to the flavor).

When fully cooked, drain any excess grease and transfer to a Crock Pot. Add the velveeta & milk.
Allow to cook on LOW, for about an hour.

Crock Pot times vary greatly, so check it occasionally, and stir if needed.

*You can add more or less of the sausage, depending on the flavor you want.
**You can add more or less milk depending on how thick you want the dip.

{ Nutella Spread & Nutella Cupcakes }

 Blame my friend Darla.

It's all her fault.

These recipes are a direct result of her doing.

You can't blame me, I don't even like Nutella.

Well, they are also a result of my failure, but we won't talk about that.

Alright, fine, we will. The other night, I had an event with my youth group. I decided to make Darla's recipe for Nutella Cream Pies. Then, I, uh... burnt them.

I know, I know, but people, I have failures in the kitchen too. O.F.T.E.N.

I still had more cookies to bake (which I did, which I DIDN'T burn), but it wouldn't be enough.

Then... Light Bulb.

And yes, I totally just typed that in Gru's voice.

I decided to just alter her filling recipe a bit and make.... Nutella Spread.

Here's what I did:

Nutella Spread

6 tablespoons unsalted butter, at room temperature
1 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup marshmallow fluff
3/4 cup Nutella
pinch of salt

Beat the butter until smooth, add in the sugar, then add the vanilla and marshmallow spread, along with the pinch of salt. Lastly, mix in the Nutella. Beat until whippy and smooth.

Serve with Graham Crackers, and cookies like Oreos & Vanilla Wafers. In the photo you'll also see some of the surviving Nutella cookies from Darla's recipe, which are delish- and remember folks, I don't even LIKE Nutella. They have a very light Hazelnut flavor, but a rich chocolatey one.

Now, fast forward two days, and I get a request from one of my Youth Grouppers for Nutella Cupcakes (I always bring treats on Sunday Nights).

Nutella Cupcakes
I used a boxed chocolate cake mix and beat a 1/2 cup of Nutella right into the batter.

Then, I made a Nutella Marshmallow Buttercream

Nutella Buttercream
Recipe by Tina @ Sugar Bean Bakers*

2 sticks of butter- softened
4 cups of powdered sugar
1 teaspoon of vanilla
2-3 tablespoons heavy cream
1/4 teaspoon salt
1/2 cup of Nutella
1/2 cup marshmallow fluff
2 squares of unsweetened chocolate,
melted, and cooled to room temperature

First make the buttercream, by beating the butter for 3 minutes. Then slowly add in the sugar and salt. Splash in the vanilla and heavy cream and beat for about a minute, then add the marshmallow fluff. Add in the chocolate and the Nutella and beat. If it's too thick, add in a bit more heavy cream, one tablespoon at a time. Beat unti light and fluffy.

*Adapted from  Darla's Perfect Vanilla Buttercream

Swirl on to cupcakes & top with sanding sugar. I used pure cane sugar on these.

I actually liked these cupcakes as well. The hazelnut is light here, as well. You can totally taste it, but it's not overpowering. Our youth minister really liked them. I'm not sure how many he ate, but I know it was more than 2!

One of the kids said they tasted like fudge, and hey, that's never a bad thing!

Either of these recipes would be excellent for the upcoming holidays. Great for parties and get togethers.

So, failure sometime equals success. You just never know, do ya!

{ Mozzy Cheese Sticks }

As I hinted at in this post, the Bean is a cheese stick fiend.

He squishy heart loves the fried gooey goodness that is THE CHEESE STICK.

Last week, after his orthodontist appointment, we stopped for lunch at a chain restaurant. He spied cheese sticks on the menu and wanted them UNTIL he noticed the price. $7.95.

He thought that was far too high, and people, he's 15, and spending his parent's money.

Maybe there's hope for this one's spending habits after all, eh?
I told him we'd pop over to the grocery and grab up the ingredients and make them ourselves, and so we did.

Here's what you need:

Mozzarella Cheese Sticks

Mozzarella String Cheese (or block, cut into fat strips)
Italian Bread Crumbs
Flour
Eggs
Spices
(garlic, Lawry's Season Salt, dried parsley, other spices if you wish)
Oil for frying

We only did 4 cheese sticks, so we used:

1/2 cup flour
1/2 cup bread crumbs
1 egg (well beaten)
1 teaspoon parsley
1/2 teaspoon garlic
1/2 teaspoon Lawry's
(use seasonings to your personal liking)

First, season your crumbs & mix well

Then cut your cheese (refraining from immature joke here)

Then we do a basic coating, what I do when I fry anything, eggs and flour.
In this case, we do it a  wee differently. First flour, then eggs, then bread crumbs.

Confused? Just watch as the Bean demonstrates.

Roll in flour to coat all sides (including ends!)

Dip in egg

Then roll in breadcrumbs (I just realized I don't have a photo of this step. omgosh, I'm a failure ;)

Then repeat the egg & breadcrumb process.

WARNING: your fingers will get gloppily coated in this stuff. Kinda weird. Kinda gross.)

As you finish, place them on a cookie sheet. When you are done coating, put them into the freezer for about 30 minutes.

This step keeps the cheese from exploding out when we fry.

After the 30 mins, heat your oil to about 350. This will cook them a BIT more slowly, but it will still only take 2 minutes MAX to finish.

Place them into the oil 2-3 at a time. Cook until golden on one side, then CAREFULLY flip them and cook the other side til golden.

WATCH CLOSELY!
they will burn quickly.

Remove to paper towels to soak up the oil.

If you are making a large batch you can put them into a 200 degree F oven to keep them warm and gooey until you finish.

Sprinkle with Parmesan cheese (you know the shaky container kind), and serve with marinara sauce.

Dive in!

Delicious.

Cheap.

Easy.

The End.

{ 2012 Memory Jar }

I bought this yesterday and wanted to show you all.

It's a memory jar for the year.

Basically, it's a $4 cookie jar from the Mart of the Wal with sticker letters applied.

Throughout the year, you drop 'memories' in it.

Like movie stubs, report cards, birthday party favors, receipts from special purchases, children's artwork, photos, letters, souvenirs from trips, cards... whatever!

Then on Dec 31 you open it up and go back through your memories for the year.

Such a clever idea, right? All your memories from the year stored in one location.

I wish it was my idea, but it's not... I found it on Pinterest (if you don't already, follow me here ).

The idea is from Kelli Crowe. You can see her original post right here.

I plan to get a photo on mine, but haven't yet.

This would be a great idea for a bridal shower/wedding gift. The newlyweds could drop memories from their first year together in it and save. Equally great idea for a baby shower gift. Baby's first year... awww....For family far away- drop your memories in, then pack up and mail to them (you can get shatterproof jars as well, or a tin, etc) at Christmas- or for New Year's Eve- and they will be able to 'share' your year with you.
First year of college would be good too. The possibilities are endless.

What can you come up with?

Tina :)

{ Favorite Christmas Photos }

Now, I’m going to show you some of my favorite Christmas photos.

And you have no choice but to sit here and look at them.

You are held captive. Mwhahahaha.

What do you mean you can close the browser window?!

PLEASE DON’T CLOSE THE BROWSER WINDOW!!!!!!!!!!!!!!!

*shew*

ok, What I meant to say was this…

Would you be evah so kind to sit here a spell and look at my favorite Christmas photos?

Thank ya, kindly.

First up, my tree.

My tree is not designer or showroom ready.

It’s covered in memories.

Ornaments that the Bean and I have made together (including the topper which he helped to glue on the buttons at 2 years old), ornaments from my annual ornament party that I’ve held for 18 years, and Hallmark ornaments. I started buying the Bean a Hallmark the year he was born. He picks them out and tries to get something that ties in with something he’s done that year. For example, the year he started Kindergarten, he got a backpack ornament, the years he got his puppies, we have puppy ornaments, the year he became obsessed with trains, a train ornament, the year he got to sit in a real fire truck he picked a fire truck ornament. This year was a challenge, finding something suitable for him at 14 years old, but finally we found a patriotic Santa for our trip to D.C.

So, it might not be the most beautiful tree ever, but the memories make it amazing to us.

Next up comes St. Nick’s:

When the Bean was 3, I decided to start our own tradition. Something that no one else in the family had ever done. After a little research, I decided to go with the (mostly) European Holiday of St. Nick's. We pretty much follow the German tradition. What we don't do is sit the shoes outside for fear raccoons will carry things off. So, Bean sits them outside his bedroom door.  When he was little, he would stick his list for Santa in his boot, Santa would pick it up and leave a little present or candy. There's not a list anymore- or boots for that matter, but the shoes still seem to appear on the 5th of December, even if he is 14 years old now.

By the way, don't worry, nothing is IN the stinky teenage shoes, just laying on top of. I actually bagged it all in a ziploc after I took the photo.

More info on St. Nicks can be found here.
